Description

Dark Roast coffee is a hybrid of Timor and Caturra beans, making it rust-resistant and suitable for high yields. While it has faced some controversy due to its hybrid nature, it has become a significant cultivar in Colombia, accounting for a large portion of the country’s coffee production.

We cultivate our coffee in small, carefully managed 1-acre batches. Each acre hosts up to 2,500 trees, spaced 2×2 meters apart. This spacing ensures that the soil can provide optimal nutrients, while air and water flow freely among the trees. Additionally, this arrangement allows sunlight to evenly reach all the plants, promoting healthy growth.

Production

Altitude: Cultivated at 1650 meters above sea level
Process Method: Washed with extended fermentation, allowing for deeper, more complex flavors to develop.
Harvesting: Hand-picked to ensure only the ripest cherries are selected, we dedicate around 3 to 4 farmers per acre to guarantee the beans are carefully selected.
Fermentation: processed using washed methods, though some farmers experiment with natural drying processes
Drying: Dried on raised beds to maintain quality and consistency

Origins

Single Origin Coffee: Líbano, Tolima (Parque de los Nevados)
Soil: Volcanic Terrain
Coffee Variety: Arabica
Coffee Farm: El cortijo.
